      Chicken Dorito Casserole

      This is another super yummy recipe and super easy!  Just what this Momma loves!

      Chicken Dorito Casserole

      Ingredients:
      *1 Bag of Doritos
      *1 Can of Cream of Chicken Soup
      *1 Can Cream of Mushroom (I didn’t use this because we don’t like mushrooms, we just doubled the can of Cream of Chicken Soup, worked GREAT)
      *1 whole chicken, cooked, skinned, deboned and chopped. (I just used Chicken Breasts, deboned, skinned & chopped)
      *1 Can of Rotel Tomatoes, drained
      *1 Bag Cheddar Cheese
      *1 Bag Shredded Sharp Cheddar Cheese
      *Non-Stick Cooking Spray

      Directions:

      In a large mixing bowl, add chicken, soups, Rotel tomatoes, and a sprinkle of salt and pepper; stir to mix ingredients.
      Mix in cheddar cheese and HALF of the sharp cheese; crumble HALF of the Doritos and mix crumbs into the mixture.
      Pour mixture into baking dish that has been sprayed with nonstick cooking spray.
      Put in a preheated oven at 375 degrees for 20-30 minutes or until hot.
      Sprinkle remainder of sharp cheese on top and take remaining Doritos and place on top of cheese.
      Place back in oven about 5 minutes.
      Make sure to watch as oven temperatures vary and you don’t want to scorch your chips; bake until cheese slightly melts.

      Feeds 6-8
      You can add more cheese or spices to this recipe.

      This is also SUPER good!!!
      My kids ate it because it had Doritos on it, what kid doesn’t like to eat chips!

        Broken Glass Cake

        This recipe that I’m going to tell y’all about is absolutely awesome!  My husband has tried (Since we’ve been married) for me to make this cake.  I always forgot about it and didn’t know how to make it…trust me when I say I HATE cooking so if something can ’slip’ my mind, I’m all for it!

        The Broken Glass Cake is a PERFECT cake for summer time.  Be it Birthdays, family get-togethers and more!

        So here we go!  It’s super easy but it is time consuming because it is with JELLO.

        I went BY the recipe for this, but I don’t see why you couldn’t use other flavors of JELL-O.

        *1 (3 oz.) Lime JELL-O

        1 cup boiling water
        1/2 Cup Cold water

        *1 (3 oz.) Orange JELL-O
        1 cup boiling water
        1/2 cup cold water

        1 (3 oz.) Cherry JELL-O
        1 cup boiling water
        1/2 cup cold water

        *1 (3 oz.) Lemon JELL-O
        *Pineapple juice (You will only need 1 Cup)
        *1/4 cup of sugar
        *1 (8 oz.) carton of Cool-Whip
        *1/2 cup of cold water

        You are going to make the Cherry, Lime, & Orange JELL-O separately using 1 cup boiling water and 1/2 cup cold water for each package of jello. Pour into separate 8×8 inch separate pans.

        Chill until firm, usually 4-5 hours.

        The next step I wouldn’t do until you’re about 1-2 hours ready to get the cake ALL together.

        Step 2:

        You’re going to use 1 cup of Pineapple Juice, and the lemon JELL-O….Bring it to a boil.
        Take off the burner and add 1/4 cup of sugar and 1/2 cup cold water
        Mix it together.
        You’re going to put this in the fridge but don’t let it get ’set’. You’re going to want it thick, but not gelled.

        Once everything is ready…Your JELL-O being set and your Pineapple mixure is thick;

        You’re going to take your cool-whip, use half of the 8oz to mix the lemon & pineapple mixture.  Once all mixed go ahead and put in the rest of the cool-whip and stir it.
        Pineapple mixture should be slightly thick and not too runny.
        You’re then going to take your JELL-O, the Cherry, Lime & Orange and cut it into about 1/2″ squares
        You’re going to
        Fold into pineapple mixture. (You want to keep it still fluffy and not get the JELL-O all crumbly.)

        Poor into Glass Bowl, or use a baking dish.  I didn’t have a glass bowl so I just used a baking dish.

        Put it in the fridge for 5-8 hours or overnight.

        IF you want to have a crust with this, it’s really good!  I used a crust with mine and loved it.
        Use 1/2 cup of Sugar
        1/2 cup of Butter
        24 Graham Crackers

        Mix all that together and make your crust, put it at the bottom of your bowl or baking dish.

        Then pour the Mixture on top of the crust and let set in the fridge 5-8 hours or overnight.

        ALSO!  I did make a Sugar-Free Broken Glass Cake for my husband (Since he is a diabetic) and you will do the same exact thing but instead use Sugar-Free JELL-O and for the sugar use the sweetner of your choice, I used Walmart brand called ‘Altern’.


        What’s great about this cake is it looks like Broken Glass when cut, and I can only imagine what it would look like in a glass bowl!

        Pentel Arts Twitter Party!!!!

        I know that most of you remember the fun we had with Pentel at our last party! Well guess what? They are doing it again! This time it is on one of my favorite subjects – scrapbooking! Yes, it’s true – I call myself a scrapbooking snob. If there is one thing that I know, it is good scrapbooking materials! Pentel has a wonderful line called Pentel Arts. Pentel Arts is made for anyone with a passion for art. You don’t have to be the best artist out there with Pentel Arts! From watercolors to glue, Pentel Arts has everything you need for your next art project.

        I can’t tell you how excited I was to open my box from Pentel! Inside was everything I needed to create the perfect scrapbooking page! From glue, pens, and even my personal favorite- the Starburst white ink pen, which is perfect for times I need a nice light pen on a dark scrapbook page!

        I wanted to tell you a little bit about the different products Pentel has to offer: first off is the Aquash watercoloring crayons. The set includes ten watercolor crayons, a water brush, blotting pad and sharpener. It is the perfect set to use when you want to add watercolors to your scrapbooking page.

        The next thing I love is what we like to call “Scrapbooking Essentials.” Now these are some of my favorite items for scrapbooking! This includes a Tape N’Glue, Outline markers, Sunburst white gel pen, Fine point Permanent marker & a set of Sign pens. Look at all of these items!

        I couldn’t wait to try out the items from Pentel Arts. Over the weekend, I made 3 scrapbooking pages! Remember, Pentel Arts is for all levels of users- you don’t have to be an expert scrapbooker to love it!

        By taking and using the starburst pen in white I was able to create white stars and (what my husband refers to as) a firecracker on the top of the page. The rest was cutting out white sheets of paper in 4 by 6 squares and adhering them with the Pentel tape and glue gun. This was a really easy and fast page!

        This page was the most difficult to make. I never would have been able to make this page if it wasn’t for the Pentel Tape N’ Glue!  Anyone who knows scrabooking knows how hard it is to find glue that does not show through vellum. Look no further- the Pentel Tape N’ Glue does not show through!

          If I Didn’t Have a Dog… or Cat

          If I Didn’t Have a Dog… or Cat……
          I could walk around the yard barefoot in safety.



          My house could be carpeted instead of tiled and laminated.

          All flat surfaces, clothing, furniture, and cars would be
          free of hair.

          When the doorbell rings, it wouldn’t sound like a kennel.


          When the doorbell rings, I could get to the door without
          wading through fuzzy bodies who beat me there.

          I could sit on the couch and my bed the way I wanted,
          with out taking into consideration how much space
          several fur bodies would need to get comfortable.

          I would have money, and no guilt to go on a real vacation.

          I would not be on a first-name basis with 6 veterinarians,
          as I put their yet unborn grandkids through college.




          The most used words in my vocabulary would not be:
          out, sit, down, come, no, stay, and leave it ALONE.

          My house would not be cordoned off into zones with
          baby gates or barriers.


          I would not talk ‘baby talk’.  ’Eat your din din’.
          ‘Yummy yummy for the tummy’..

          My house would not look like a day care center, toys
          everywhere.

          My pockets would not contain things like poop bags,
          treats and an extra leash.

          I would no longer have to spell the words B-A-L-L,,
          W-A-L-K,, T-R-E-A-T,, O-U-T,, G-O,, R-I-D-E,, C-O-O-K-I-E

          I would not have as many leaves INSIDE my house as outside.

          I would not look strangely at people who think having
          ONE dog/cat ties them down too much.

          I’d look forward to spring and the rainy season instead
          of dreading ‘mud’ season.

          I would not have to answer the question ‘Why do you have
          so many animals?’ from people who will never have the joy
          in their lives of knowing they are loved unconditionally by
          someone as close to an angel as they will ever get.

          How EMPTY my life would be!!!

          We’re going to BlogHer 2010. Help me with my fears!

          That’s right, we’re going to BlogHer 2010!
          I have so many feelings about this I don’t know where to even start!

          I’m nervous, anxious, scared, excited, happy, worried, and above all honored to be attending BlogHer 2010.

          Why all the different feelings you might ask?

          Well because it’s my first conference!  I’ve of course been invited to many events, but since they are all so far away I’ve chosen not to go.  Why??  Well because I have a deathly fear, and that fear is FLYING!
          People think I am crazy, and it’s not such a big deal, but to me it is and it’s a huge deal.
          Am I flying to NY?  No, I’m not going to fly…I’m going by car.  That’s right!  Arkansas all the way to NY!  Am I crazy??  Perhaps I am.
          Some fears you can’t let go of, and flying is one of them for me.
          I do have great support from Amanda who will be going to BlogHer 2010 with me and yes, a 6 1/2 month pregnant woman driving with me.
          Talk about MANY ‘potty stops’.
          Amanda thinks I am crazy as well, but she stands behind me.

          People say ‘Just have a few drinks & you’ll be fine’. I don’t drink! I’m on medication that I can’t drink with, and WON’T.
          Well, ‘Take a pill to calm you down!’  Nope, I don’t take anything I don’t have to for my health.
          Although I wish someone would knock me the heck out so I can get on a plane lol.  But in reality it probably wouldn’t make me pass out & I’ll have to turn around and kick their butt for trying to hit me! LOL

          Honestly though, I wasn’t going to go to BlogHer 2010 because of so many fears I have.
          First of course is flying.  Second, being away from my family which I have NEVER done before.  I’ve not even taken a weekend to myself without my children and husband.
          Third, because I have a shy personality.  In a way!!! I mean, yes I can sit and talk to someone and get to know them, but when they walk away I’m always afraid I didn’t make a good impression and they will talk about me behind my back.
          So many of my fears are due to my lack of self confidence.
          I can fit in and talk with everyone, tell them of the AMAZING brand who is sponsoring me to BlogHer 2010, that isn’t the problem! It’s me who is the problem.

          So look at it this way!
          I’ve been a SAHM for 13 years!  I had my first daughter when I turned 18, and I got married as soon as I turned 18.
          I’ve never had the kind of life of the parties and all of that, I was born and raised in California, moved to Arkansas when I was 17 because of an abusive boyfriend, met a man who I thought would love me & take care of me, only to find out that he was very mentally abusive and stayed in that marriage for 10 years!
          Even though I have a man who loves me, and isn’t abusive AT ALL and loves me, accepts me for who I am (even though I do know how to tick him off) there will always be certain fears I am not sure I’ll ever get over.
          What I know is my family.  When I am home, I’m safe…plain and simple.
          When I go out, it’s to the store and NEVER alone! Always have at least one of my kids with me.
          So as far as clothing goes, it’s a joke!
          I wear either jeans or capri’s and t-shirts.
          I’ve never gone anywhere that is business casual, like what we’re suppose to wear at BlogHer lol.
          So there is another fear!

          What the heck am I going to wear???
          Amanda said I can borrow some of her clothes…Problem is, is she was gifted with a nice rack with ‘ta-ta’s’.  Me, I got them, however…Nothing like Amanda LOL!
          So, will her clothing fit me?  I have NO clue hehe.
          My birthday is coming up, I will be 32!!!  So, I plan on asking for clothing for my birthday, business casual! However, with the economy the way it is, most likely my family will have money troubles and simply put I won’t get anything.  Which is fine!  I love my family regardless!!!  However, I am wondering how the heck I am going to dress myself so I don’t look like a complete and utter SLOB!

          Ever notice when I type, I jump from one thing to another???  Try to keep up, I apologize lol.

          So let’s go over the fears thus far!

          1. Fear of flying
          2. Fear of not fitting in
          3. Fear of leaving my comfort zone
          4. Fear of looking like a slob

          Again, if it wasn’t for such an amazing sponsorship I wouldn’t be going.  When I got the email of being sponsored I felt HONORED and the one other blogger they contacted to sponsor, I felt absolutely amazing because she is a big blogger and really respected.  So this was just an opportunity I couldn’t and won’t pass up!
          As for my fears?  I’m trying to convince myself that I am not alone with them, and that when I actually get to NY they will all go away!
          Amanda coming with me will be a huge help!  Amanda and I fit together since the moment we chatted together on Twitter.  She has really helped me get out of my shell, and what is great is that I can be myself around her and she absolutely understands.  So she brings the best of me out and I so love her for that!

          I guess all in all that my biggest fear is going to my first conference.  I’m sure after this, I won’t have any problems what so ever.  I have to get out of my shell somehow, right?

          Epson Artisan 710 – Review + Giveaway

          I have had the most funnest time reviewing the Epson Artisan 710!  I mean seriously, there is so much you can do with this awesome printer and I have had SO much fun!
          Not only can I use it for ‘work’ but I have also used it for fun!

          So does that cover it?  Well not really because those are just the specs.  I like to go with my personal feelings better than having to read about the specs because sometimes what a product SAYS it does, it doesn’t always DO IT!
          However, I am a strong supporter of Epson and I stand behind the Epson name and brand.
          I am IN LOVE with my new printer!  Honestly, it prints fast, the ink is great quality and it lasts awhile!  I hate when my kids bug me to print out pictures for them, coloring pages especially and it wastes all my black ink!  What is awesome about the Epson Artisan 710 is that once you run out of black ink, it uses the colors to form and match black ink.  So it saves you time & money in the long run!

          The scanning is super fast, and goes directly to your computer.  I run Windows 7 and it is compatible with it.  Runs absolutely perfect on my computer!

          I also tried doing the note book paper out of one of my kids photo’s.  It came out awesome.  So what I am going to do is make my own ‘Barefoot Mommies’ personalized notebook paper!
          Instead of me spending a fortune on it I can simply make it myself and still have the professional look I am aiming for.  You can also just print out college-ruled or wide-ruled paper without anything on it.
          Would help with school children when you’re totally out of lined paper!  And, it looks just like the lined paper you buy from the store…Course, you’d have to punch your own holes. :)

          Epson sent me some pictures they had printed from the Epson Artisan 710 and I have got to say W.O.W!  You know how when you print a picture and it LOOKS like it was printed from a printer?
          Not for the Epson Artisan 710!  The pictures came out absolutely perfect!  I mean, really stunning to say the least.  No, I didn’t just go off of the pictures I was sent, I actually put the Epson Artisan 710 to the test and printed out my own pictures.  They looked exactly the same & PERFECT!  Even my parents thought that I had them made/developed at the store.

          Honestly, how you take the picture is how it prints out.
